braised in soya, sugar, rich aromatic Sichuan spices and sweet
fermented paste. Served in a claypot over a bed of shiitake mushrooms.
This dish dates back about 900 years to the Song Dynasty.
Our variation uses Pork Knuckles which is cooked and braised in Chinese wine,
chill bean paste and soya sauce which gives a sweet aromatic sauce.
